●Chiyo Shibata
Owner of the cheese factory “Sen” Sen in Chiba prefecture. Completely original craft cheese created by blending lactic acid bacteria and yeast unique to Japan has received high praise both domestically and internationally, such as receiving the Minister of Agriculture, Forestry and Fisheries Award and the World Cheese Award 2019-20 Bronze Award. In 2019, he also appeared in “Passion Tairiku” (Mainichi Broadcasting) and continues to challenge the world as a cheese craftsman who brews the land of Japan.
